它们有厚的、常常木质化的次生壁,具有普通的单纹孔。成熟后一般都失去原生质体。石细胞的分布在许多植物中,石细胞表现为异细胞,即其形状、大小和壁的厚度等方面,较易与周围细胞区别开来。

梨富含膳食纤维,可以达到6%,有的品种甚至能达到9%,尤其是不溶性纤维含量丰富(梨的膳食纤维中71%是不溶性纤维,29%是可溶性纤维)。其实吃梨的时候就能感受到那种硬渣的感觉,这就是梨果实中特有的一种叫“石细胞”的结构。石细胞是普通薄壁细胞的细胞壁变厚变硬、细胞质消失而形成的,其主要成分是木质素,是不溶性膳食纤维的一种。[1]
